- 75% shutoff — critical: at ~75% through the cycle the display counts down 0:30. Press START to continue or it auto-cools. Stay near the machine.
- Listen for FC — likely 10–12 min today. Mark time-to-FC the moment it starts.
- Drop trigger: end of first crack into the first snaps of second crack (~1:30–2:30 after FC starts). Hit C to cool.
- Cool cycle ~10 min, door cracked at end.
- Weigh roasted. Page computes loss %.
- Before Guatemala: let drum cool 7 min with door open.
